Doritos Taco Salad
- 1 pound Lean Ground Beef Or Turkey
- 2 Tablespoons Water
- 2 cans (15 Oz. Size) Red Kidney Beans, Drained
- 1/3 cups Taco Seasoning
- 1 teaspoon Cumin
- 1/2 teaspoons Garlic Powder
- 3 whole Romaine Hearts
- 3 whole Medium Tomatoes
- 1 whole Cucumber
- 1 cup Ranch Dressing
- 1 cup Mild Pace Salsa
- Nacho Cheese Doritos, As Desired
- Add lean ground meat to a nonstick skillet and cook over medium heat until done. Add water, beans, taco seasoning, cumin, and garlic powder. Cook until beans are hot and sauce is thickened, about 2 minutes.
- Wash lettuce and chop lettuce into bite-sized pieces. Dice tomatoes. Slice cucumber lengthwise into quarters and then slice the other way into 1/8-inch slices.
- Add vegetables to a large salad bowl. Top with meat-bean mixture. Add ranch, salsa, and crushed Doritos(R). Toss to combine and serve immediately. Top with sour cream if desired.
- Recipe Notes
- I normally make this salad 1/3 at a time and put the remaining meat-bean mixture in the fridge for later. 1/3 of this salad will make a filling meal for 2 hungry adults.
