Savory Parmesan Oatmeal

  1. In a medium pot, bring chicken broth to a boil. Add oats, a dash of salt, and stir. Bring to a boil, then lower heat and simmer for about 5-7 minutes, or until oats are soft and most of the liquid is absorbed. Set aside.
  2. Cook sausage according to package directions. Set aside.
  3. In a small skillet, melt butter over medium heat. Fry or cook eggs sunny-side up until desired consistency.
  4. Pour oatmeal into a bowl. Top with sausage patties, egg, and Parmesan cheese. Season with salt and pepper, if desired. Serve immediately.
