Margarita Pie
- 1 (9-inch) graham cracker pie shell
- 1 envelope unflavored gelatin
- 1 c. sugar
- 1 tsp. salt
- 4 eggs, separated
- 1 c. lime juice
- 1 tsp. grated lime peel
- 1/3 c. tequila
- 2 Tbsp. Triple Sec
- 1/2 c. whip cream
- 2 Tbsp. powdered sugar
- Mix gelatin, 1/2 cup granulated sugar and salt in saucepan. In bowl, beat egg yolks and lime juice until foamy.
- Add to gelatin mixture.
- Cook over low heat, stirring until gelatin is dissolved, 3 to 5 minutes.
- Remove from heat.
- Stir in lime peel, tequila and Triple Sec.
- Chill until thickened, but not firmly set.
- In separate bowl, beat egg whites until stiff.
- Slowly add 1/2 cup granulated sugar.
- Fold into chilled gelatin mixture. Pour into pie shell.
- Chill until set.
- Whip cream until peaks form; add powdered sugar.
- Top pie with cream.
- Decorate with lime twists.
