Strawberry Banana Baked Oatmeal Cups
- 3 cups Old Fashioned Oats
- 3 Tablespoons Light Brown Sugar, Packed
- 3 Scoops Vital Proteins(R) Collagen Peptides
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1 cup Milk (any Kind)
- 2 Eggs
- 2 teaspoons Vanilla Extract
- 1/2 cups Ripe, Mashed Bananas (about 1 1/2 Medium Bananas)
- 1 cup Diced Fresh Strawberries (about 7-9 Medium Strawberries)
- Preheat oven to 350u0b0F. Grease a 12-count muffin tin with nonstick cooking spray. Set aside. (See note below.)
- In a medium bowl, combine old-fashioned oats, brown sugar, collagen peptides, baking powder, and salt. Set aside.
- In a large bowl, whisk milk, eggs, vanilla extract, and mashed banana. Pour dry ingredients into wet ingredients and stir until thoroughly combined. Gently fold in diced strawberries.
- Spoon mixture into each muffin tin, filling almost to the top. Bake for 30-35 minutes, or until cups are set and golden brown. Remove from oven and let cool for 10 minutes in pan. Then remove to a wire rack and let cool completely.
- Serve with a drizzle of honey or maple syrup, if desired. Enjoy!
