Pear Fennel Arugula Salad

  1. Thinly slice fennel with a mandoline. You can also use a knife, but a mandoline is much easier. Julienne the pear (I like to use a julienne peeler). Add to a salad bowl and toss with arugula.
  2. For the dressing, mix orange muscat champagne vinegar (Trader Joe's product), avocado oil, honey, salt and pepper.
  3. Pour the amount of dressing desired into the salad and finish the salad by adding feta cheese and candied walnuts (I used store-bought candied walnuts to save time). Enjoy!
