Easy Chocolate Cupcakes
- 1 cup All-purpose Flour
- 1/2 cups Unsweetened Cocoa Powder
- 1 teaspoon Baking Powder
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Fine Sea Salt
- 1 teaspoon Chai Spice Mix (optional)
- 1/2 cups Granulated White Sugar
- 1/2 cups Light Brown Sugar, Packed
- 1/3 cups Vegetable Oil
- 1/2 cups Buttermilk
- 1/3 cups Hot Water Or Hot Coffee
- 1/2 Tablespoons Vanilla Extract
- 1 Large Egg
- Preheat oven to 360u0b0F (180u0b0C) and line a 12-cup cupcake pan with liners.
- Add all dry ingredients (flour, cocoa powder, baking powder, baking soda, salt, chai spice (if using) to a large bowl and whisk until well combined.
- Add all wet ingredients (sugars, oil, buttermilk, hot water or coffee, vanilla, egg) to a medium bowl or measuring cup and whisk until smooth. Add wet ingredients to the dry ingredients and stir (no whisk-use a wooden spoon or spatula!) just until combined. The batter will be thin.
- Divide batter between prepared cupcake liners. Bake for 20 minutes or until a toothpick inserted into the middle comes out clean. Cool in the pan for 5 minutes, then remove to a cooling rack to cool completely before adding any frosting.
