Mom’S Favorite Nanaimo Bars
- FOR THE CRUMB MIX:
- 1/2 cups Butter
- 1/4 cups Sugar
- 5 Tablespoons Cocoa
- 1 whole Egg
- 1 teaspoon Vanilla
- 1-2/3 cup Graham Wafer Crumbs
- 1 cup Desiccated Coconut
- 1/2 cups Chopped Walnuts

- FOR THE ICING:
- 1/4 cups Butter
- 2 cups Sifted Icing Sugar
- 1 whole Egg

- FOR THE CHOCOLATE:
- 5 whole Squares Of Semi-sweet Chocolate
- 1 teaspoon Butter
- Combine first 5 ingredients and cook over medium heat, stirring constantly until smooth and slightly thickened. Remove from heat and stir in graham wafer crumbs, coconut and walnuts. Mix well and press into 9 inch square pan.
- Cream 1/2 cup butter and gradually beat in icing sugar and egg. Spread over crumb mixture in pan and chill about 20 minutes or so.
- Melt chocolate and 1 tablespoon butter together over hot water and spread on top of icing. Chill until the chocolate is set. Store in refrigerator. Makes 2-3 dozen depending on how big you cut the squares.
