Pepper Relish
- 2 large red peppers, coarsely chopped
- 2 large green peppers, coarsely chopped
- 2 large yellow peppers, coarsely chopped
- 1 onion, coarsely chopped
- 1 c. cider vinegar
- 1 c. white vinegar
- 1 1/2 tsp. salt
- 1 c. sugar
- 1 tsp. hot pepper flakes
- 1 Tbsp. mixed whole pickling spices
- Wash 3 (1 pint) jars with soapy water and rinse well.
- Put the jars in a large saucepan; cover with water and bring to a boil. Boil for 20 minutes.
- Turn off the heat and leave the jars in the water while you make the relish.
- Wash, rinse and sterilize the lids in the same way, using a separate pan.
- Drain the jars and lids just before using, so they are dry but still hot.
- Put the peppers and onion in a bowl.
- Cover with boiling water.
- Let stand for 5 minutes and drain in a colander.
