Chicken Rice Dressing

  1. Combine margarine and lemon juice; brush chicken with mixture.
  2. Sprinkle with salt and pepper.
  3. Place in 12 x 9 x 2 inch baking dish; bake at 400 degrees for 30 minutes.
  4. Combine rice, chicken broth, and water in a medium pan; bring to a boil.
  5. Reduce heat.
  6. Cover and simmer about 5 minutes or until all broth is absorbed.
  7. Set aside.
  8. Cook sausage, onion, and celery in a skillet until sausage is done, stirring occasionally to crumble sausage.
  9. Combine sausage and rice mixture.
  10. Season with salt and pepper to taste; stir well.
  11. Spoon mixture around chicken and bake for an additional 30 minutes.
