Warm Brown Rice Lentil Bean Salad
- FOR THE SALAD:
- 1 cup Black Lentils
- 1 cup Brown Rice
- Pinch Of Salt
- 6 cups Water
- 400 grams Tin Red Kidney Beans
- 400 grams Tin Butter Beans
- 2 Tablespoons Finely Chopped Fresh Chives
- FOR THE DRESSING:
- 2 Tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Honey
- Salt And Pepper, to taste
- To make the salad:
- In a large saucepan, place lentils, brown rice, salt and water on to boil. Boil over medium high heat for about 20 minutes, until lentils and rice are tender.
- In the meantime, drain kidney beans and butter beans and rinse well under cold water.
- Once rice and lentils have cooled to warm, pour them into a salad bowl. Add beans and chives and gently toss together.
- For the dressing:
- Mix all ingredients together in a small bowl. Pour over the salad and toss together gently. Alternatively, serve the dressing on the side.
