Salted Nut Roll Bars
- 1 box Yellow Cake Mix
- 3/4 cups Butter Or Margarine, Melted, Divided In Recipe
- 1 whole Large Egg
- 3 cups Mini Marshmallows
- 1 package 12 Oz Butterscotch (or Peanut Butter) Chips
- 1/2 cups Light Corn Syrup
- 1 teaspoon Vanilla
- 2 cups Peanuts, Salted
- 2 cups Rice Krispies Cereal
- Combine cake mix, 1/4 cup of the melted butter and egg in a bowl. It will be a little lumpy & dry, this is okay. Press into a 9 x 13 in pan.Bake at 350 for 10-12 minutes (until very LIGHTLY browned).
- Sprinkle mini marshmallows evenly over baked cake layer. Return to oven for about 3-4 minutes (watch carefully).
- While marshmallows are melting in oven: In a medium sized sauce pan, melt butterscotch chips, corn syrup, 1/2 cup of the butter & vanilla over low heat. After all is melted, add the peanuts then the Rice Krispies and mix together.
- Immediately spread or drop large spoonfuls onto marshmallows.
- Chill pan briefly and cut into bars. You can chill for a few hours if you prefer, only problem is it's hard to cut.
- Cut into smaller bars because these are Rich!
