Healthy Maple Granola
- 1/4 cups Coconut Oil, Liquid
- 1/2 cups Pure Maple Syrup
- 1 teaspoon Cinnamon
- 2 teaspoons Vanilla
- 1/2 teaspoons Kosher Salt
- 2 cups Rolled Oats
- 1/2 cups Sliced Almonds
- 1/2 cups Pecans, Roughly Chopped
- 1/4 cups Whole Flax Seeds
- 1/2 cups Shredded Coconut (unsweetened)
- 1 Tablespoon Milled Flax Seed (optional)
- Preheat oven to 350u0b0F.
- In a small mixing bowl, combine liquid (or melted) coconut oil, maple syrup, cinnamon, vanilla and salt. Set aside.
- On a large parchment-paper-lined baking sheet, combine oats, nuts, flax seed, and coconut. Bake for 15-20 minutes, stirring twice, until toasted brown and fragrant.
- Remove oats and reduce oven temperature to 300u0b0F. Drizzle maple syrup mixture over the oats and carefully stir until well combined. Return to the oven and bake at 300u0b0F for 25 minutes.
- Remove from the oven and fold granola onto a large sheet of parchment paper to cool fully. Store in an airtight container for up to 5 days. Enjoy over your morning yogurt!
