Great Grandma Spinar’S Corn Casserole
- 2 cans Creamed Corn
- 1 can Regular Corn
- 1 bunch Green Onions, diced
- 1 package Soda Crackers (crushed)
- 1 whole Egg
- 1 can Evaporated Milk
- 4 Tablespoons Butter Or Margarine
- Preheat oven to 375 degrees. Grease one 9x9 glass casserole dish.
- Layer one can of creamed corn, 1/2 can of regular corn, 1/2 of the onions, and enough crackers to cover the other ingredients. Salt & Pepper to taste.
- Repeat the layer.
- Whisk the evaporated milk and the egg until they're well combined. Pour the mixture over the casserole until the liquid comes up 3/4 of the way to the top of the layers. (Don't worry if, like me, you accidentally pour almost all of the mixture in-it just makes the casserole a little more moist)
- Dot the top of the casserole with butter or margarine.
- Bake uncovered for 1 hour and serve warm!
- Note: You can easily increase this by adding another layer-cook time stays the same!
