Lima Beans And Pork Chops

  1. In heavy skillet, saute the chops until brown.
  2. Remove the chops and cut meat into bite size pieces.
  3. Saute the onions and rice in the butter in a large heavy skillet until the onions are golden and the grains of rice have chalky edges.
  4. Add the tomatoes, beans and reserved pork.
  5. Add chicken broth, bay leaf, rosemary and season to taste.
  6. Cover the pan and reduce heat; simmer for 30 minutes without stirring; fluff the rice with fork. Arrange the stew on a large platter and sprinkle with parsley.
