Lima Beans And Pork Chops
- 8 pork chops
- 2 large onions, chopped
- 2 c. rice
- 3 tsp. butter
- 2 tomatoes, peeled and chopped
- 2 c. fresh lima beans
- 6 c. chicken broth
- 1 bay leaf
- pinch of rosemary
- salt and pepper to taste
- 1 tsp. fresh parsley, chopped
- In heavy skillet, saute the chops until brown.
- Remove the chops and cut meat into bite size pieces.
- Saute the onions and rice in the butter in a large heavy skillet until the onions are golden and the grains of rice have chalky edges.
- Add the tomatoes, beans and reserved pork.
- Add chicken broth, bay leaf, rosemary and season to taste.
- Cover the pan and reduce heat; simmer for 30 minutes without stirring; fluff the rice with fork. Arrange the stew on a large platter and sprinkle with parsley.
