Watermelon Cucumber Basil Gimlets

  1. Combine sugar, water, cucumber and basil in a small saucepan over medium heat. Bring to a simmer and cook, whisking occasionally, until sugar dissolves, about 5 minutes. Remove from heat and let cool to room temperature. Strain into a container, discarding cucumber and basil.
  2. Puree watermelon in a blender or food processor. Pass through a mesh strainer into a shaker filled with ice. Pour in vodka and 1 ounce of the cucumber basil simple syrup. Shake rapidly for about 20 seconds and strain into rocks glasses filled with ice. Top with soda water if desired and garnish with lime wheels.
