Watermelon, Feta And Mint Salad

  1. Cube watermelon into bite-sized pieces and arrange pieces on a platter. Crumble feta cheese on top. Slice onion thinly and scatter over salad.
  2. Pick mint leaves and add to salad. Roast pine nuts in a small pan without any additional fat. Keep a close eye on them, they can burn easily. When they are ready, immediately transfer to a plate and let cool for a few minutes.
  3. Mix together olive oil and balsamic vinegar. Add white vinegar if you like your salads on the tart side (I do). Adjust taste with salt and pepper. Pour over salad, scatter pine nuts on top, and serve immediately.
