Asian Salad With Tamari Peanut Dressing
- 2 cups Iceberg Lettuce, Chopped
- 2 cups Green Leaf Salad (I Used Arugula)
- 1/2 Red Bell Pepper, Washed And Chopped
- 1/2 Yellow Bell Pepper, Washed And Chopped
- 1 cup Shredded Carrot
- 1/4 cups Fresh Mint, Roughly Chopped
- 1 Ripe Avocado, Sliced Lengthwise, Pitted And Chopped Into Bites
- 1/2 cups Roasted Unsalted Peanuts, Roughly Crushed
- 1 teaspoon Black Sesame Seeds, For Garnish
- 1 teaspoon Sesame Seeds, For Garnish
- FOR THE DRESSING:
- 2 Tablespoons Walnut Oil Or Olive Oil
- 2 Tablespoons Peanut Butter
- 2 Tablespoons Cold, Filtered Water
- 1 Tablespoon Tamari (or Soya Sauce)
- 1 Tablespoon Maple Syrup Or Honey
- 1 clove (Small) Garlic, Minced
- 1/2 Lime, Juiced
- In a large mixing bowl, toss salad greens, chopped peppers, shredded carrot, mint, avocado and peanuts.
- In a small Mason jar, combine oil, peanut butter, water, tamari, maple syrup, garlic, and lime juice. Shake vigorously until smooth. Pour dressing over salad and toss until really well coated-don't skimp on the dressing!
- Divide into lovely big salad bowls to serve as a main for two, or leave in a larger bowl to serve as a side. Garnish with black and white sesame seeds. Enjoy!
