Three-Cheese Meat Loaf
- 2 lb. ground round
- 1 large onion, chopped
- 2/3 c. bread crumbs (optional)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 green pepper
- 2 eggs
- 1/2 tsp. paprika
- 1 1/2 c. milk
- 2 tsp. Italian seasoning
- 3 c. Mozzarella cheese, cubed
- 3/4 c. Swiss cheese, grated
- 1/2 c. Parmesan cheese
- Mix in a large bowl with hands the meat, onion, green pepper, bread crumbs, pepper, salt, paprika, Italian seasoning, eggs (beaten with milk) and cheeses.
- Don't overmix.
- Use pan bigger than meat loaf.
- Shape into loaf.
- Bake at 350u0b0
- for 1 hour.
- May cook ahead.
- Use microwave to warm up.
- Sprinkle the top with Italian seasoning.
- Serve with mustards, chutneys or hot curried fruit.
