Watermelon Salad With Sherry Lemon Vinaigrette
- FOR THE SALAD:
- 1 whole Small Watermelon, Diced Or Cut Into Slices
- 1 whole Small Red Onion, Sliced Into Half Moons
- 1/2 pints Cherry Tomatoes, Cut In Half
- 8 ounces, weight Feta Cheese, Cubed Or Crumbled
- 1/4 cups Fresh Mint Leaves, Chopped Or More To Taste
- 1/4 cups Fresh Dill, Chopped, Or More To Taste

- FOR THE DRESSING:
- 1 whole Lemon, Juiced And Zested
- 1/4 cups Olive Oil
- 2 Tablespoons Sherry (up To 3)
- Salt And Freshly Cracked Black Pepper
- Layer the watermelon, red onion, tomatoes, feta, mint and dill.
- In a small bowl, whisk together the lemon zest (just use the zest from about 1/2 of the lemon), lemon juice (use the juice from the whole lemon), olive oil, sherry, salt and pepper. Adjust seasoning according to taste. Drizzle on the salad.
