Simple Greek Pasta Salad
- 1/2 pounds Pasta, Macaroni Or Similar Noodle
- 1/2 Red Onion, Thinly Sliced
- 1 cup Cherry Tomatoes
- 1 cup Cucumber, Sliced In Half Moons
- 1 Orange Bell Pepper
- 1/3 cups Feta Cheese, Cubed Or Crumbled
- FOR THE DRESSING:
- 1/4 cups Apple Cider Vinegar
- 1/2 cups Canola Oil
- 1 pinch Onion Powder
- 1 pinch Garlic Powder
- 1 Tablespoon Dijon Mustard
- 1/2 teaspoons Freshly Ground Black Pepper
- 1/2 teaspoons Fresh Dill, Chopped
- 1/2 teaspoons Fresh Oregano, Chopped
- Bring pot of salted water to a boil. Cook pasta to al dente. Drain.
- In a medium bowl, add pasta, vegetables and feta cheese. Stir to combine.
- In a separate small bowl or small jar, combine dressing ingredients. Shake or stir to blend together.
- Pour dressing over pasta and vegetables. Toss to combine. Chill or serve immediately.
