Sweet Onion Crappie Pie

  1. Mix cracker crumbs with melted butter and press into an 8-inch pie plate.
  2. Saute onions in 2 tablespoons of butter over medium heat until lightly brown.
  3. Pour in the chicken stock and stir.
  4. Put onions into cracker pie crust.
  5. Place fillets over the onions. Beat eggs with milk, salt and pepper.
  6. Pour over crappie.
  7. Sprinkle paprika, then cheese over fillets.
  8. Bake at 350u0b0 for at least 30 minutes.
  9. Sprinkle with parsley (optional) when fillets are cooked. Cool for 10 minutes.
  10. Serves 4 to 6 people.
