Wheat Berry Veggie Salad
- 1-1/2 cup Wheat Berries
- 7 cups Water
- 1 Tablespoon Salt
- 6 ounces, weight Feta Crumbles
- 2 whole Tomatoes, Chopped
- 1/2 cups Greek Olives, Pitted And Sliced
- 1-1/2 cup Cucumber, Chopped
- 5 whole Radishes, Thinly Sliced
- 2 Tablespoons Fresh Or Dried Mint (use Less If Dried)
- 2 Tablespoons Fresh Or Dried Basil (use Less If Dried)
- 2 Tablespoons Fresh Parsley (Use Less If Dried)
- 1 can White Fava Beans, Rinsed
- 1 whole Lemon, Juice From One Lemon
- 1/3 cups Vinaigrette Or Italian Dressing (oil Based)
- 3 whole Green Onions, diced
- 1 dash Salt, Pepper And Cayenne To Taste
- Cook wheat berries for one hour, in salted water. Drain and rinse to cool.
- Meanwhile, prepare all other ingredients except salt, pepper and cayenne.
- Mix all ingredients when wheat berries are done, except salt, pepper and cayenne - add this at the end to taste.
- Serve or cool till serving.
