Apple Raisin Bread
- vegetable spray
- 1 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 c. sugar
- 3/4 c. toasted wheat germ
- 3/4 c. whole wheat flour
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- 2 egg whites
- 1/2 c. water
- 1 (12 oz.) can frozen unsweetened apple juice concentrate
- 1 1/2 c. chopped apples, peeled
- 1/2 c. raisins
- Preheat oven to 350u0b0.
- Spray an 8 x 5 x 3-inch loaf pan with vegetable spray.
- In large bowl, sift flour, baking soda, baking powder and sugar.
- Add whole wheat flour, wheat germ, cinnamon and allspice and set aside.
- In another large bowl, mix egg whites, water and apple juice concentrate.
- Mix in flour mixture.
- Pour mixture into pan.
- Bake 50 to 60 minutes or until a toothpick inserted in the middle comes out clean.
- Makes 12 (1 slice) servings.
