Pronto Pizzas Deluxe(Serves Six)
- 2 Tbsp. olive oil
- 4 small leeks (white part only), sliced crosswise
- 2 large red bell peppers, thinly sliced
- 1/4 tsp. dried crushed red pepper
- 2/3 lb. turkey Italian sausage, casings removed (about 6 small)
- 2 (1 lb.) pizza crusts (like Boboli)
- 1/2 c. olive paste *
- 1 1/2 lb. Mozzarella, grated
- 2/3 c. chopped fresh basil
- Heat oil in heavy large skillet over medium-high heat.
- Add leeks and bell pepper and saute until just tender, about 8 minutes.
- Add crushed red pepper and stir 30 seconds.
- Transfer to plate.
- Add sausage to skillet and cook until no longer pink, crumbling with fork, about 4 minutes.
- Transfer to another plate. (Can be prepared 1 day ahead; cover vegetables and sausage separately and chill.)
- Preheat oven to 450u0b0.
- Place pizza crusts on pizza pans or baking sheets.
- Spread 1/4 cup olive paste over each.
- Top with cheese.
- Divide sausage and vegetables between pizzas.
- Bake until cheese melts, about 15 minutes.
- Top with basil.
