Kale And Brussels Sprouts Salad
- 1/2 bunches Kale
- 10 Brussels Sprouts
- 1/4 cups Grated Parmesan Cheese
- 1/4 cups Slivered Almonds
- FOR THE DRESSING:
- 1 Egg (optional)
- 1 teaspoon Dijon Mustard
- 1 Tablespoon Lemon Juice
- 1 teaspoon Salt
- 1/4 teaspoons Ground Black Pepper
- 1 cup Oil
- Wash kale, remove stems, and chop into small pieces.
- In a food processor, thinly slice Brussels sprouts.
- Add kale, Brussels sprouts, Parmesan cheese, and slivered almonds to a large bowl.
- In a food processor, add egg, mustard, lemon juice, salt, and pepper and blend. With the food processor on high speed, slowly drizzle in oil.
- Pour dressing over the salad and toss.
- Note: The egg in the dressing is optional. Without the egg, the dressing will be thinner.
