Ziti With Hearty Meat Sauce
- 3 Tbsp. olive oil
- 2 Tbsp. butter
- 2 Tbsp. chopped parsley
- 1 medium onion, chopped
- 1 large carrot, shredded (1 c.)
- 1 lb. boneless beef chuck shoulder, finely chopped or very lean ground beef
- 2/3 c. milk
- 28 oz. can Italian style tomatoes, chopped
- 1 1/2 tsp. salt
- 3/4 tsp. sugar
- 1/2 tsp. fresh pepper
- In heavy 4-quart pan over medium heat, cook oil, butter, parsley, onion and carrot until tender.
- Add meat and cook until meat loses its pink color.
- Increase heat to medium-high.
- Add milk and cook until it evaporates, stirring often.
- Stir in tomatoes and juice; add spices.
- Heat to boiling.
- Reduce heat to low and simmer, uncovered, 1 1/2 hours.
- Cook ziti al dente and drain.
- Serve sauce over noodles.
- (Good with green salad and French bread.)
