White Bean, Baby Cuke, Tomato Salad
- 3 whole Baby Cucumbers
- 1 pint Grape Tomatoes
- 1/2 teaspoons Sea Salt (or To Taste)
- 1/2 whole White Vidalia Onion
- 1 can (15 Oz. Can) Small White Beans
- 1 Tablespoon Minced Garlic
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 cups Red Wine Vinegar
- 1/2 teaspoons Black Pepper, Or To Taste
- 1/2 teaspoons Garlic Salt, Or To Taste
- 1.Slice baby cucumbers in half lengthwise; then cut them in 1/2" or so slices.
- 2. Cut grape tomatoes in half lengthwise; sprinkle with a bit of sea salt.
- 3. Dice onions.
- 4. Drain beans.
- 5. Add everything to a large bowl. Sprinkle with sea salt, black pepper, and garlic salt; toss together.
- 6. Refrigerate and serve chilled.
