White Bean, Herb, And Feta Salad
- 15 ounces, weight Can Of Cannellini Or Great Northern Beans, Drained And Rinsed
- 1/4 cups Red Onion, Minced (can Use 1 Shallot Instead)
- 1/4 cups Carrot, Finely Chopped
- 1/4 cups Feta, Crumbled
- 1 teaspoon Fresh Oregano, Chopped
- 1 teaspoon Fresh Thyme, Chopped
- 1 Tablespoon Fresh Parsley, Minced
- 1 Tablespoon White Wine Vinegar
- 1/4 cups Olive Oil
- 1 teaspoon Lemon Juice
- To Taste, Salt And Pepper
- Mix together beans, onion, carrot, feta, and herbs.
- In a separate bowl, whisk together vinegar, olive oil, lemon juice, salt, and pepper. Pour over salad and gently mix. Chill for about 30 minutes before serving. Serve alone or with a warm baguette.
