Veal Loaf With Pistachios(Serves 6)

  1. Preheat the oven to 375u0b0.
  2. Heat the olive oil in
  3. a saucepan and add the scallions, onions and garlic.
  4. Saute, stirring, for 5 minutes.
  5. Place the veal and the onion mixture in a bowl.
  6. Chop the liver very finely and add it to the mixture along with the bread crumbs, parsley and pepper.
  7. Blend well.
  8. Spoon the mixture into a 9 x 5 x 3-inch loaf pan.
  9. Cover the pan with foil and place it in the oven.
  10. Bake for 1 hour.
  11. Remove the foil and bake 15 minutes longer.
