Veal Loaf With Pistachios(Serves 6)
- 1 Tbsp. olive oil
- 1/4 c. scallions, chopped
- 1 1/4 c. onions, chopped
- 1/2 tsp. garlic, chopped
- 2 lb. veal, ground
- 1/3 c. pistachio nuts, chopped
- 1/2 lb. calf's liver
- 1 c. bread crumbs
- 4 Tbsp. parsley leaves, chopped
- freshly ground pepper
- Preheat the oven to 375u0b0.
- Heat the olive oil in
- a saucepan and add the scallions, onions and garlic.
- Saute, stirring, for 5 minutes.
- Place the veal and the onion mixture in a bowl.
- Chop the liver very finely and add it to the mixture along with the bread crumbs, parsley and pepper.
- Blend well.
- Spoon the mixture into a 9 x 5 x 3-inch loaf pan.
- Cover the pan with foil and place it in the oven.
- Bake for 1 hour.
- Remove the foil and bake 15 minutes longer.
