Peppered Beef Tenderloin
- 1 tsp. dried oregano
- 1 tsp. paprika
- 1 tsp. dried thyme
- 1 tsp. salt-free seasoning blend
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. pepper
- 1/2 tsp. white pepper
- 1/8 to 1/4 tsp. cayenne pepper
- 1 beef tenderloin (3 lb.)
- Combine seasonings and rub over entire tenderloin. Wrap tightly and refrigerate overnight for more intense flavor. Place on a rack in a roasting pan. Bake, uncovered, at 425u0b0 until meat is cooked as desired. Allow approximately 45 - 50 minutes for rare or until a meat thermometer reads 140u0b0, 55 - 60 minutes for medium-rare (150u0b0), 62 - 65 minutes for medium (160u0b0), and 67 - 70 minutes for well-done (170u0b0). Let stand 10 minutes before carving.
