White Chocolate Coconut Oatmeal Cookies
- 1 cup Butter, Melted
- 1 cup Brown Sugar, Packed
- 1/2 cups White Sugar
- 2 Eggs
- 2 teaspoons Vanilla Extract
- 2 cups Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1-1/2 teaspoon Cinnamon
- 1 cup Coconut
- 1 cup Pecans, Finely Chopped (I Put Mine Through The Food Processor)
- 1-1/2 cup White Chocolate Chips
- 2-1/2 cups Old Fashioned Oats
- Preheat oven to 350u0b0F and line pans with parchment paper or a Silpat liner.
- Melt butter. Place brown sugar and sugar in a stand mixer, add butter and cream together for 3-4 minutes. Add eggs and vanilla extract and beat on medium speed for 1 minute.
- In a separate bowl, combine flour, salt, baking soda and cinnamon. Add dry ingredients to the wet and beat until combined. Stir in coconut, pecans, chocolate chips and oats.
- Place dough balls about the size of golf balls on cookie sheets with 2 inches between each and bake for 10-12 minutes.
- Let cool on cooling racks and store in an airtight container.
