White Chocolate Covered Cherry Truffles
- 1 box (18.25 Oz. Box) Cherry Chip Cake Mix
- Additional Required Ingredients Specified In Mix Package (typically Water, Eggs And Oil)
- 8 ounces, weight Cherry Flavor Store Bought Frosting (not The Whipped Variety If You Can Avoid It)
- 16 ounces, weight White Baking Chocolate
- Bake the cake according to directions on the box (you'll typically need water, eggs, and oil, as directed in mix package). Once cooked, let cool completely.
- After the cake has cooled, break it up into small pieces. Put into a large mixing bowl. Add the frosting. Mix it all up with your hands, making sure to incorporate well. After the mixture is well mixed, roll into balls and place on a baking sheet.
- Put the balls into the freezer for 30 minutes to chill.
- Once the cake balls have chilled for 30 minutes or more, melt your chocolate. Use either a double boiler or the microwave, whichever way you prefer.
- Once chocolate is completely melted, put a few of the cake balls into the melted chocolate to coat. Using a fork, let the extra chocolate drip off the cake ball and back into the melted chocolate. Lay on wax paper until coating has a matte finish and is dry.
