White Chocolate Cranberry Bars
- FOR THE BARS:
- 1/2 cups Butter, Melted
- 1 whole Egg
- 1/3 cups Brown Sugar
- 1 teaspoon Vanilla Extract
- 1 cup All-purpose Flour
- 1/4 teaspoons Cinnamon
- 1/2 teaspoons Ginger
- 1/4 teaspoons Salt
- 3/4 cups White Chocolate Chips
- 1/2 cups Dried Cranberries
- FOR THE FROSTING:
- 3/4 cups White Chocolate Chips, Melted, Divided
- 2 ounces, weight Cream Cheese, Softened
- 1 teaspoon Vanilla Extract
- 1-1/2 cup Powdered Sugar
- 1/3 cups Dried Cranberries
- For the bars: Preheat your oven to 350u0b0F. Line an 8 inch square brownie pan with parchment paper.
- In a large bowl combine melted butter, egg, brown sugar and vanilla and beat until smooth. Fold in flour, cinnamon, ginger and salt until dry ingredients are covered with wet ingredients. Fold in chocolate chips and cranberries.
- Spread batter evenly into the baking pan. Bake for 20 minutes. Then remove the pan from the oven and let cool completely before frosting (about 1 hour).
- For the frosting: Melt the chocolate in the microwave (be careful, white chocolate burns fast so just heat it for about 30 seconds at a time and stir before heating any longer).
- Mix together 2/3 of the melted white chocolate and the cream cheese until smooth. Fold in vanilla and powdered sugar (if it is not thick enough for you, keep adding powdered sugar). Spread it onto the cooled bars. Sprinkle cranberries on top. Drizzle with remaining white chocolate. Place in fridge until frosting and chocolate are set.
