Bananas Barrington

  1. Dust banana halves heavily in the brown sugar and cinnamon-sugar mixture.
  2. Melt butter in a sturdy frying pan over medium-low heat (add a few drops of olive oil to prevent burning). Add coated banana halves and brown.
  3. Cook until evenly browned on each side.
  4. Raise heat to medium for 60 seconds; add brandy extract.
  5. Turn heat down immediately; cover and cook 2 minutes longer.
  6. Remove from heat.
  7. Place 2 halves of banana on four of your favorite dessert dishes.
  8. Add 2 scoops of vanilla ice cream to the center of the banana halves; drizzle with brandy sauce if desired.
  9. Serve immediately.
