White Chocolate Tequila Sunrise Cupcakes

  1. Preheat oven to 350u0b0F. Prepare muffin tin with paper liners.
  2. In a large bowl combine flour, baking soda, baking powder and salt. In a separate bowl, whisk together orange juice, orange zest, milk, oil, tequila, vanilla extract, eggs and sugar. Stir in dry ingredients and mix until combined. Stir in white chocolate chips.
  3. Fill cupcake liners about 2/3 full and bake for 20-25 minutes. Poke it with a toothpick to see if it comes out clean. Transfer to a cooling rack and allow to cool down before frosting.
  4. For the frosting, cream butter and confectioners' sugar until smooth and fluffy. Add milk, tequila and orange zest and mix until combined. Spread graciously onto cupcakes.
  5. Decorate with white chocolate discs and bright orange cupcake liners. If you are feeling super creative, insert a cut straw into the cupcake or maybe even an umbrella.
  6. If you are a bit more on the lazy side (we all have that side), then use a vanilla cake mix, add the ingredients required on the box and just toss in the tequila, orange juice, orange zest and white chocolate chips.
  7. Shot of tequila is compulsory!
