Mocha Macadamia Cookies
- 1 c. butter or margarine, softened
- 1 c. granulated sugar
- 1 c. light brown sugar
- 1/3 c. instant coffee
- 3 large eggs, slightly beaten
- 3 1/2 c. unsifted all-purpose flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 (8 oz.) bar semi-sweet chocolate, cut into chunks
- 1 (7 oz.) jar Macadamia nuts
- In
- a large bowl, beat together butter and sugars until fluffy.
- Dissolve coffee in eggs; beat into butter mixture.
- Add flour, baking soda and salt.
- Beat just until well combined.
- Heat oven to 350u0b0.
- Coarsely chop chocolate.
- Place Macadamia nuts in a strainer.
- Shake off excess salt.
- Stir into dough along with chocolate.
- Drop slightly rounded measuring tablespoonfuls of dough 2 inches apart onto ungreased baking sheets.
- Bake for 12 to 15 minutes or until golden and firm in centers.
- Remove to wire rack to cool.
- Makes 5 dozen.
