Jambalaya
- 1 Tbsp. olive oil
- 1/2 lb. ham, in 1/2-inch pieces
- 1/2 lb. kielbasa, in 1/2-inch pieces
- 1 large onion, diced
- 1 green and 1 yellow pepper, diced
- 2 celery ribs, diced
- 3 cloves garlic, minced
- 1 1/2 c. raw, long grain rice
- 15 oz. seasoned diced tomatoes
- 2 c. chicken broth
- 1/2 tsp. pepper
- 1/2 tsp. thyme
- 1/4 tsp. crushed red pepper
- Heat oil in large skillet. Add ham and kielbasa.
- Heat 7 to 8 minutes.
- With slotted spoon, remove from pan.
- In same skillet, saute onion, peppers, celery and garlic 5 to 6 minutes until soft. Stir in rest of ingredients and heat to boil.
- Reduce heat.
- Cover and simmer 15 minutes. Add ham and kielbasa. Cover and simmer 4 more minutes, stirring once. Remove from heat.
- Let stand 5 minutes.
