Pat'S Veggie Salad
- 1 c. bulghur wheat
- 1 1/2 c. boiling water
- 1 tsp. salt (optional)
- 1/4 c. lemon or lime juice
- 1 tsp. crushed garlic
- 1/2 c. chopped scallions (including some greens)
- 1/2 tsp. dried mint
- 1/4 c. olive oil
- 2 tomatoes, diced
- 1 can chickpeas
- 1/2 c. frozen peas
- 1/2 c. grated carrot
- 1 chopped cucumber
- green peppers (optional)
- Garnish with Feta cheese (crumbled) and oil-cured black olives. Combine bulghur wheat, water and salt in bowl; cover and let sit for about 20 minutes until wheat is chewable.
- Add lemon juice, garlic and mint; mix thoroughly.
- Refrigerate for 2 to 3 hours. Add chopped veggies; garnish with Feta and black olives.
- Test seasonings.
- May need more lemon juice.
