Pat'S Veggie Salad

  1. Garnish with Feta cheese (crumbled) and oil-cured black olives. Combine bulghur wheat, water and salt in bowl; cover and let sit for about 20 minutes until wheat is chewable.
  2. Add lemon juice, garlic and mint; mix thoroughly.
  3. Refrigerate for 2 to 3 hours. Add chopped veggies; garnish with Feta and black olives.
  4. Test seasonings.
  5. May need more lemon juice.
