Whole Wheat Banana Bread

  1. Preheat oven to 350 F. Grease a standard-size loaf pan and set aside.
  2. Into a medium mixing bowl, sift together the flours, salt and baking powder. Stir in the oats and sugar. Set aside.
  3. In a separate large bowl, whisk together the bananas, yogurt and eggs. Fold the dry ingredients into the liquids just until combined.
  4. Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean and the surface is golden brown, 45-50 minutes.
  5. Allow to cool on a wire rack in the loaf pan for 10 minutes and then turn out onto a rack to cool slightly.
