Roasted Nectarines

  1. Preheat your oven to 350 degrees F. Cut your nectarines in half and twist them to release the pit (note this will only work if your nectarines are actually ripe). Take a spoon to the side with the pit still intact and pop it out.
  2. Place the nectarine halves in a square baking dish, cut side up.
  3. Take half a cup of a flaky, crunchy cereal and put it in a bowl. Add the honey and mix until all the cereal is coated.
  4. Divide this mixture equally among your nectarine halves, pressing the topping down lightly into the cut sides of the fruit.
  5. Place in the oven for 30 minutes, or until the nectarines are soft and the topping is golden brown.
  6. Top each nectarine with one scoop of ice cream.
