Whole Wheat Blueberry Oatmeal Applesauce Cookies
- 1-1/2 cup White Whole Wheat Flour
- 1 cup Old Fashioned Rolled Oats
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 1 cup Unsweetened Applesauce
- 3/4 cups White Sugar
- 3/4 cups Light Brown Sugar
- 1 Large Egg
- 1/2 teaspoons Vanilla Extract
- 1 cup Fresh Blueberries
- Preheat oven to 350 F. Line baking sheets with parchment paper or a Silpat and set them aside.
- In a medium bowl combine flour, rolled oats, baking powder and salt and set aside.
- Using an electric mixer stir together applesauce, white sugar and brown sugar until combined. Stir in egg followed by vanilla extract. Gradually mix in the dry ingredients just until combined. Fold in blueberries.
- Drop tablespoon-sized portions of the dough onto prepared baking sheets. Bake for 10-12 minutes. Cool slightly on baking sheets and then transfer to wire rack to cool completely.
