Whole Wheat Chocolate Chip Banana Oat Muffins
- 1-1/2 cup Whole Wheat Flour
- 1 cup Rolled Oats
- 1/2 cups Brown Sugar (lightly Packed)
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/2 cups Semi-Sweet Chocolate Chips
- 2 whole Large Eggs
- 1/4 cups Canola Oil
- 1/4 cups Milk
- 3 whole Bananas, Peeled And Mashed
- Coarse Or Turbinado Sugar, Optional For Tops
- Preheat the oven to 400 F. Line a 12-count standard size muffin tin with paper or silicone liners, or lightly spray with cooking spray.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, salt and chocolate chips. In another bowl whisk together the eggs, oil, milk, and mashed bananas. Pour the wet ingredients into the dry and stir until just combined.
- Divide the batter between the muffin cups. They will be quite full. Sprinkle a bit of coarse or turbinado sugar on top of each muffin. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
