Bandera’S Macho Salad
- FOR THE SALAD:
- 6 cups Romaine Lettuce, Chopped
- 1-1/2 pound Chicken Breast Shredded
- 1 whole Avocado, Chopped
- 4 ounces, weight Goat Cheese Crumbled
- 2 whole Roma Tomatoes, Sliced Into Wedges
- 1/2 cups Roasted Almonds, Chopped
- 1 cup Corn
- 16 whole Dates, Sliced
- 1 cup Cornbread Croutons
- FOR THE DRESSING:
- 2 Tablespoons Dijon Mustard
- 1 whole Lemon, Juiced
- 1 teaspoon Balsamic Vinegar
- 2 teaspoons Brown Sugar
- 1/2 teaspoons Salt
- 1/4 teaspoons Fresh Black Pepper
- 2 cloves Garlic, Minced
- 1/4 teaspoons Dried Basil
- 1/3 teaspoons Dried Oregano
- 1/2 cups Olive Oil
- Combine all salad ingredients in a large bowl.
- Whisk together dressing ingredients. Toss with salad.
