Whole Wheat Chocolate Chip Muffins

  1. Preheat oven to 400 degrees. Spray a 12-cup muffin pan with non-stick spray.
  2. Sift together ground oats, wheat flour, wheat bran, brown sugar, baking soda, and salt.
  3. In a separate bowl, mix together applesauce, oil, egg, milk, and vanilla extract.
  4. Add applesauce mixture to dry ingredients, stirring gently to combine. Fold in 1/2 to 3/4 cup semi-sweet chocolate chips. Avoid over-mixing.
  5. Distribute mixture evenly between 12 muffin cups. Bake in preheated oven for 10 minutes.
  6. Note: My dark muffin pan coupled with my hot oven equate to a 10 minute cooking time. A lighter pan and/or a cooler oven might call for increased cooking time.
