Whole Wheat Gingerbread Men Pancakes

  1. In a medium bowl, whisk together whole wheat flour, brown sugar, baking powder, ginger, cinnamon, cloves, and salt.
  2. In a separate bowl, whisk together flax, water, milk, applesauce, and vanilla.
  3. Add milk mixture to flour mixture and stir just until combined. Pour onto a hot griddle using a 1/4 cup scoop. Cook until golden brown on both sides. If desired, use a gingerbread man cookie cutter to create shaped pancakes.
  4. Note: an egg can be used instead of the flax seed and water.
