Summer Skirt Steak Salad
- 10 ounces, weight Skirt Steak
- 1 pinch Kosher Salt
- 1 pinch Black Pepper
- 1 pinch Garlic Powder
- 4 cups Mixed Greens
- 1/2 cups Steamed Corn
- 1/4 cups Diced Onion
- 4 ounces, weight Crumbled Feta Cheese
- 1/2 cups Balsamic Vinegar
- 1/2 cups Light Ranch Dressing
- 1 whole Peeled, Pitted And Chopped Avocado
- Season your skirt steak with some salt, pepper, and garlic powder. Cook them on a medium heat grill to medium rare (about 6 minutes per side). Then remove it from the grill and let the steak rest for about 10 minutes to avoid losing all those yummy juices. During this resting time, the steak keeps cooking itself to a medium, perfect for this salad.
- In two large salad bowls, add your mixed greens, corn, avocado, onion, and feta. Slice your skirt steak into strips and add them to the bowls. Top with a drizzle of ranch and balsamic and some avocado chunks. Enjoy!
