Whoopie Pies (An Amish Tradition)
- 2/3 cups Crisco Shortening
- 3/4 cups White Sugar
- 1 whole Egg
- 1 teaspoon Vanilla
- 2-1/4 cups Flour
- 1 cup Chocolate Drink Mix (like Quik)
- 1 teaspoon Salt
- 1/2 teaspoons Baking Soda
- 1 cup Milk
- 2 cups Marshmallow Creme
- 3/4 cups Butter
- 2 cups Powdered Sugar
- Beat together shortening and sugar, then add egg and vanilla. Stir together flour, chocolate drink mix, salt and baking soda; add alternately with milk. Drop by rounded tablespoonfuls onto cookie sheets lined with parchment paper. Bake at 350u0b0 for 10-12 minutes.
- For filling: Beat marshmallow creme and butter together. Add powdered sugar and beat WELL. Spoon filling into the middle of half the cookies. Top with remaining cookies.
- Note:
- I like to wrap these individually and put them in the freezer. They make an easy treat for kids and adults.
