Wicked Hot Chicken And White Bean Soup
- 2 Tablespoons Canola Oil
- 2 whole Green Bell Peppers, Seeded And Diced
- 1 whole Serrano Pepper (seeds And All), Diced
- 2 cloves Garlic, Chopped
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Oregano
- 1/2 teaspoons Salt
- 4 cups Chicken Broth
- 1/2 whole Cooked Chicken (thigh And Leg Meat), Deboned And Skin Removed, Diced
- 1 can (15 Oz. Can) Great Northern Beans, Drained
- 1/2 bunches Cilantro, Coarsely Chopped
- Heat oil in a pot over medium heat. Add the peppers, garlic, cumin, oregano, and salt; stir well and saute for 3-5 minutes. Add remaining ingredients, cover and reduce heat to medium-low. Simmer until soup is bubbly, about 15 minutes.
