Tomato Beef Sukiyaki
- 2 Tablespoons Olive Oil
- 1 whole Medium Onion, Chopped
- 2 cloves Garlic, Sliced
- 3 whole Tomatoes, Quartered
- 1 Tablespoon Butter
- 1/4 cups Soy Sauce
- 1/4 cups Red Wine
- 1 Tablespoon Sugar
- 4 whole Zucchini, 1/4-inch Rounds
- 8 ounces, weight Mushrooms, Quartered
- 1 pound Shaved Beef Roast (Chuck Sliced Sandwich Meat Thin)
- 1 teaspoon Better Than Bullion Roasted Beef Base (Optional)
- 1 Tablespoon Tomato Paste (optional)
- Heat a Dutch oven over medium-high. Add olive oil and stir fry onions, garlic, and tomatoes until soft and fragrant.
- Add butter. Once melted, add the rest of the ingredients and reduce heat to medium low. Simmer for 15-20 minutes until, beef and veggies are done. Serve over rice and enjoy. If desired, add optional ingredients before serving. Taste for final seasoning.
