Minestrone Soup
- 6 c. beef stock
- 1 c. Rose or dry white wine
- 1/4 lb. cut bacon
- 1 can kidney or garbanzos
- 2 c. shredded raw cabbage
- 1 c. diced potatoes
- 1 c. diced carrots
- 1 clove garlic, chopped
- 1 lb. stewed tomatoes
- 1/2 tsp. Italian seasoning
- salt and pepper
- 1 c. diced zucchini (optional)
- 1 sausage link, cooked (optional)
- 1/4 lb. elbow macaroni
- 1/4 c. chopped parsley
- 1/4 c. Parmesan cheese
- In large kettle combine all ingredients except the last 3. Bring to a boil, cover and simmer for 45 minutes.
- Stir occasionally.
- Add macaroni.
- Cook 45 minutes more.
- Before serving, stir in parsley and cheese.
